For me, it's about optimizing health. It's about lifestyle and longevity. Then you think about what vegetarian diets can do for the mass population, in terms of lower consumption of resources. When you look at the numbers, it's pretty staggering. Scott Jurek, Ultramarathon Runner - UltraRunning Magazine's North American Male Ultrarunner of the Year in 2003, 2004, 2005, and 2007, and placed second in 2006.

Even minor tampering with nature is apt to bring serious consequences, as did the introduction of a single chemical (DDT). Genetic engineering is tampering on a monumental scale, and nature will surely exact a heavy toll for this trespass. Dr. Eva Novotny
One farmer says to me, ‘You cannot live on vegetable food solely, for it furnishes nothing to make the bones with;’ and so he religiously devotes a part of his day to supplying himself with the raw material of bones; walking all the while he talks behind his oxen, which, with vegetable-made bones, jerk him and his lumbering plow along in spite of every obstacle. Plant-based foods taste better because we feel better eating them and contemplating their origins. Eating slowly, we enjoy contemplating the organic orchards and gardens that supply the vegetables, fruits and grains we are eating. We are grateful for the connection we feel with the earth, clouds, gardeners, and the seasons. In contrast, eating animal foods is often done quickly, without feeling deeply into the source of the food; for who would want to contemplate the utter hells that produce our factory-farmed meat? Until he extends the circle of compassion to all living things, man will not himself find peace. Albert Schweitzer
Intellectually, human beings and animals may be different, but it's pretty obvious that animals have a rich emotional life and that they feel joy and pain. It's easy to forget the connection between a hamburger and the cow it came from. Moby
“Using a balanced, plant-based diet, I have dramatically reduced risk factors for heart disease in countless patients.” Dr. Terry Shintani, MD, JD, MPH
On average, vegetarians consume fewer calories from fat than non-vegetarians, particularly saturated fat, and have a higher consumption of carbohydrates than non-vegetarians. In addition, vegetarians tend to consume fewer overall calories and have a lower body mass index than non-vegetarians. These characteristics, in addition to the dietary pattern per se, may contribute to the improved health outcomes of vegetarians. From Report of the Dietary Guidelines Advisory Committee on the Dietary Guidelines for Americans, 2010
If we continue to address the issue of the environment where we live as though we're the only species that lives here, we'll create a disaster for ourselves. Gaylord Nelson
