Basil Cream
Ingredients
- 1½ cups cold heavy cream/whipping cream or vegan equivalent
- 20-25 fresh sweet basil leaves
- 3 Tablespoons brown sugar
Instructions
- Bring 1½ cups cream to a gentle simmer in a small saucepan over medium heat.
- Bruise basil leaves by hitting them repeatedly with the dull side of a knife.
- Stir basil leaves into cream for about 1 minute.
- Remove from heat, let cool for about 2 minutes. Cover tightly with plastic wrap and let steep for 25 minutes.
- Strain basil mixture through a fine sieve into a glass jar, pressing solids to extract liquid. Refrigerate until very cold, at least 5 hours.
- Whisk basil cream with sugar in a chilled bowl, or with a hand mixer on high speed until soft peaks form.
- Serve on top of a dessert, such as Pear Honey Toast, and enjoy!
