Chocolate Truffles

8-12 Truffles
Ingredients
  • 1 cup cooked black beans
  • 2 heaping Tablespoons almond butter
  • 1 heaping Tablespoon raw cacao
  • 2 teaspoons coconut oil
  • 1 teaspoon raw vanilla powder or vanilla extract
  • Stevia to taste
  • ½ cup shredded coconut, finely chopped nuts, and/or raw cacao powder, for garnish
Instructions
  1. Blend all ingredients, except for garnishes, together in a food processor until fully combined and creamy. You may need to scrape down sides occasionally. Place in refrigerator for 1 hour.
  2. Roll into balls and then roll in shredded coconut or your favorite finely chopped nuts to coat. Store in refrigerator for up to 4-5 days or in the freezer for up to a month. Enjoy!
