Ingredients

Crust:

  • 2 Tablespoons shredded coconut
  • 1 cup raw walnuts
  • 1 cup raw macadamia nuts
  • ½ packed cup pitted dates
  • ½ teaspoon cinnamon
  • Pinch of salt

Filling:

  • 8 bananas
  • 1½ cups cashews, soaked 20 minutes
  • ½ cup shredded coconut, soaked 20 minutes
  • ½ cup raw agave nectar
  • 1 teaspoon cinnamon
  • 1 Tablespoon vanilla extract*
  • 1 cup raw coconut oil
  • 3 Tablespoons lemon juice

*Not considered a raw product

Toppings:

  • ½ cup chopped raw pecans
  • ½ cup shredded coconut, soaked 20 minutes
Instructions
  1. Prepare Crust: Layer shredded coconut at the bottom of a spring form pan.
  2. Process Crust ingredients in a food processor until combined well. Press mixture firmly on top of shredded coconut.
  3. Prepare Filling: Slice 3 bananas and layer over Crust.
  4. In food processor, combine 5 bananas and remaining Filling ingredients. Process until creamy smooth. Pour over Crust.
  5. Sprinkle with Toppings. Place in freezer until firm - at least 2-3 hours. Serve and enjoy!
