Vegan Chocolate Chip Cookies

Vegan Chocolate Chip Cookie recipe from Down to Earth Organic and Natural.

Ingredients
  • 2 cups all-purpose flour
  • 1 Teaspoon baking powder
  • ¾ Teaspoon baking soda
  • ½ Teaspoon fine salt
  • 1 ¼ cups vegan chocolate chips
  • ½ cup sugar
  • ½ cup packed light or dark brown sugar
  • ½ cup plus 1 Tbsp canola oil
  • ¼ cup plus 1 Tbsp water
  • 1 Teaspoon vanilla extract 
Instructions
  1. In a large bowl whisk together the flour, baking powder, baking soda, and salt. Add the vegan chocolate chips to the flour and toss to coat.
  2. In another bowl whisk the sugars with the canola oil, water, and vanilla extract until smooth and incorporated.
  3. Add the flour mixture to the sugar mixture. Stir until just combined with no flour visible. Do not overmix!
  4. Cover with plastic wrap. Refrigerate the dough for at least 12 hours and up to 24 hours.
  5. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper. Remove dough from refrigerator and use spoon to portion dough into 2-inch mounds.
  6. Bake for 12-13 minutes, or until the edges are just golden. Enjoy!
