Corn Fritters
Fun bites paired with a bunch of different dips make an instant party feast!

12-14 Fritters
Ingredients
- 3 Tablespoons + ¼ cup organic safflower oil
- 1 jalapeño, deseeded and diced
- 3 Tablespoons diced red onion
- ¼ cup chopped green onion
- 1 (15-ounce) can organic corn, drained
- ½ teaspoon paprika
- ½ teaspoon cumin
- Salt and pepper to taste
- 1 cup organic corn meal
- 1 cup all purpose gluten free flour
- 2 Tablespoons ground flax (mixed in 3 Tablespoons water)
- ¼ cup water, as needed
- 2 Tablespoons olive oil
Instructions
- Heat 3 Tablespoons of oil in non-stick fry pan.
- Sauté jalapeño and onions until translucent.
- Add corn, paprika, cumin, salt, and pepper and mix together.
- Remove sauté from heat.
- In a separate bowl, mix together both flours.
- Add flax and sauté mixture to flour and mix until well combined.
- Add water as needed to get a thick dough consistency.
- Mix in olive oil until well combined.
- Form 2 inch balls, flatten with hands and continue until all mixture is used.
- Heat 1/4 cup oil in non-stick frying pan to medium high. Add more oil if needed to cover pan.
- Place fritters in pan, making sure not to crowd them.
- Fry on one side until golden brown and flip repeating the process. Place fritters on a plate and let cool. Serve and Enjoy!
