Asparagus Salad w/ Balsamic Vinaigrette

4-6 Servings
Ingredients: 

Salad

  • 1 bunch asparagus
  • 1½ cups water
  • 1 lemon, juiced
  • Pinch of salt
  • Olive oil
  • 1 head Romaine lettuce, shredded
  • ¼ cup thinly sliced red onion
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese (optional)

Dressing

  • ¼ cup balsamic vinegar
  • 3 Tablespoons olive oil
  • 1 lemon, juiced
  • 1 Tablespoon agave nectar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
Instructions: 
  1. Wash and pat dry asparagus. Cut off woody ends.
  2. Place water in sauté pan. Add lemon juice, salt and a drizzle of olive oil.
  3. Bring to a boil. Add asparagus, cover and reduce heat.
  4. Steam for 5 minutes until al dente. Drain and let cool.
  5. Cut asparagus into bite size pieces.
  6. In a large bowl combine asparagus, lettuce, onion, tomatoes and feta cheese.
  7. In a separate bowl whisk Dressing ingredients together.
  8. Pour Dressing over salad and toss gently. Enjoy!
