Raw Cheese Spread

This delicious raw cheese spread is perfect in wraps, on raw cracker and on raw bread.

Ingredients
  • 1½ cups cashews, soaked 1 hour
  • 1 cup macadamia nuts
  • ½ cup nutritional yeast
  • ¼ cup fresh basil
  • ¼ cup fresh dill
  • 1 teaspoons red pepper chili flakes
  • 1 clove fresh garlic
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 2 cups chopped spinach
  • ½ cup kalamata olives
  • ½ cup chopped sundried tomatoes in olive oil
  • ¼- ½ cup water more as needed
Instructions
  1. Drain and rinse water from soaked cashews.
  2. Place cashews, macadamia nuts, nutritional yeast, basil, dill, red pepper chili flakes, garlic lemon, salt, pepper, and water into a food processor and blend until smooth and creamy.
  3. Place processed ingredients in a large bowl and mix in spinach, kalamata, and sun dried tomatoes.
