Sweet Potato Quesadillas

These simple quesadillas are a great weeknight meal: serve with a big salad or some soup for a complete meal!

Ingredients
  • 3 cups chopped sweet potato or yam
  • 1 cup chopped white potato
  • ½ cup chopped onions
  • 2 Tablespoons chopped garlic
  • Salt to taste
  • ¼ cup plant-based milk
  • 1 Tablespoon vegan margarine
  • 8-10 tortillas (flour or corn)
  • 1-2 cups shredded cheese or vegan cheese
  • 1-2 cups chopped fresh cilantro
  • Oil, for grilling
Instructions
  1. Add sweet potatoes, white potatoes, onions and garlic to a large saucepan and cover with water. Bring to a boil. Reduce heat and let simmer for 10 minutes, or until potatoes are very soft. Drain in a colander.
  2. In a large bowl mash potatoes with ¼ cup milk and margarine. Mixture should be smooth but still thick.
  3. Spread a layer of mashed potato mixture onto a tortilla. Sprinkle with cheese or vegan cheese on one half and top with cilantro. Fold in half and set aside. Continue with remaining tortillas.
  4. Heat one teaspoon oil in a large non-stick skillet. Add quesadilla and cook until browned, about five minutes. Flip, and cook until opposite side is browned. Remove to serving plate and cut into quarters. Serve immediately as is or with salsa, guacamole or Mole Sauce. Enjoy!
