Perfect Chocolate Chip Pancakes

Make sure your pan is hot and don’t stir your batter too much! That is the secret to “Perfect Pancakes”.

Ingredients

Dry:

  • 1 cup all-purpose flour
  • 1 teaspoon coconut palm sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Wet:

  • 1 Tablespoon chia seeds (plus 3 Tablespoons water)
  • ¼ - ½ cup mini vegan chocolate chips
  • 1 ¼ cups nut milk
  • 1 teaspoon apple cider vinegar
  • 1 Tablespoon coconut oil

Instructions
  1. In a large mixing bowl, combine all Dry ingredients.
  2. In a separate bowl combine the Wet ingredients. Make sure to stir so the chia seeds don’t clump. Stir for about 3-5 minutes.
  3. Once Wet ingredients are thoroughly, add Wet into Dry and mix just until combined.
  4. Heat coconut oil in a skillet and let pan get very hot.
  5. Use a ½ cup measuring cup and scoop batter into pan. You will be able to fit 3-4 pancakes at a time depending on the size of your skillet. Cook on one side until bubbles form and then flip over and cook for another 2 minutes until batter is firm and fully cooked.
  6. Serve and enjoy!
