Apple Spice Cake Recipe from Down to Earth Organic and Natural
Ingredients
  • 2 teaspoons egg replacer powder (follow directions on box)
  • ½ cup maple syrup
  • ¾ cup oil
  • ¼ cup buttermilk
  • 2 teaspoons vanilla
  • 1½ cups grated apples
  • ½ cup chopped pecans
  • 2 cups whole wheat pastry flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ⅛ teaspoon allspice
Instructions
  1. Preheat oven to 300°. Grease an 8"x8" pan.
  2. In a large bowl combine egg replacer, maple syrup, oil, buttermilk and vanilla. Stir in apples and pecans.
  3. In a separate bowl sift together the flour, salt, baking soda, and spices.
  4. Fold into apple mixture and mix well, but do not over mix.
  5. Pour batter into prepared pan and bake in preheated oven for 1 hour or until a toothpick inserted in the center comes out clean.
  6. Serve with your favorite soy or dairy ice cream. Enjoy!
