Vegan Affogato

Traditionally made with espresso over ice cream, this vegan version incorporates those great flavors with healthier ingredients.

Ingredients
  • ½ cup strong coffee (regular or decaf)
  • Few drops orange extract (optional)
  • 1 pint of your favorite vegan vanilla ice cream like Coconut Bliss® Vanilla
  • 2 teaspoons cacao nibs
  • 1 teaspoon slivered almonds
Instructions
  1. Prepare your favorite coffee: drip, espresso, French-press or instant; set aside to cool.
  2. If desired, stir in a few drops of orange extract.
  3. Place a scoop of vegan ice cream in each serving cup.
  4. Pour an ounce of coffee over the ice cream and immediately garnish with the cacao nibs and slivered almonds. Enjoy!
