Ingredients
  • 4 cups Japanese cucumbers, seeded and sliced thin in half moon shape
  • Marinade
    • 2 Tablespoons lemon or lime juice
    • 2 Tablespoons ume plum vinegar
    • 2 cloves garlic, pressed
    • 1/4 teaspoon hot chile pepper (minced) or sambal paste
  • 1/4 cup cilantro, minced
Instructions
  1. Place cucumber in a mixing bowl.
  2. Combine Marinade ingredients and toss into cucumbers.
  3. Let marinate for 30mins to one hour.
  4. Drain cucumbers and toss in cilantro. Enjoy!
