Kale Applesauce

Blending kale into homemade applesauce is a great way to ‘sneak’ healthy greens into your diet.

6-8 Servings
Ingredients
  • 3 pounds mixed apples, cored and chopped (about 6-8 apples)
  • Water, as needed
  • 3 cups kale
Instructions
  1. Add apples to a stockpot. Add a few inches of water and bring to a boil. Reduce heat, cover, and let simmer for 15 minutes, until apples are very soft and falling apart.
  2. Add kale and let cook five minutes more, until kale is wilted.
  3. Place apples and kale into food processor and blend until totally smooth. Serve immediately, or store leftovers in an airtight container for up to a week. Enjoy!
