Braised Kale w/ Shitake Mushrooms

Braised Kale recipe from Down to Earth Organic and Natural.

Ingredients
- ½ cup blanched almond slivers
- 1 head of curly kale, washed, dried, stems removed, and chopped
- 3 Tablespoons Safflower oil
- 1 small red onion, thinly sliced
- 1 small red pepper, sliced
- 6 shitake mushrooms, sliced
- 3 garlic cloves, sliced
- 3 Tablespoons capers
- Salt and pepper to taste
- Squeeze of lemon juice
- Drizzle of olive oil
Instructions
- Heat sauté pan over high heat.
- Add almond slivers and toast until brown. Remove from pan and set aside.
- Add kale and toast until crisp. Remove and set aside.
- Add oil, onions, red peppers, and mushrooms and sauté until caramelized.
- Add garlic and capers.
- Place kale and almond slivers back into pan. Season with salt and pepper.
- Remove from heat, add a squeeze of lemon and drizzle with olive oil. Enjoy!
