Curried Coconut Cauliflower
This super easy weeknight recipe is more flavorful than you can imagine. Serve alongside beans, rice, curries, or in wraps.

Ingredients
- 3 cups chopped cauliflower
- ½ cup shredded coconut
- 2 Tablespoons liquid coconut oil
- 1-2 teaspoons curry powder
- Pinch black pepper and sea salt
Instructions
- Preheat oven to 375°.
- In a mixing bowl toss together cauliflower, coconut, coconut oil, curry powder, salt, and pepper.
- Pour into 9x13 baking dish and bake for 30-35 minutes, stirring halfway, or until cauliflower is golden. Enjoy!
