Ingredients

Salad:

  • 4-5 cups Romaine lettuce, chopped
  • ¼ cups black and green olives
  • ½ cup red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, peeled and cubed
  • 2 carrots, ribbon peels
  • ¼ cup red onion, sliced
  • ¼ cup pepperoncini, sliced

Dressing:

  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 lemon, juiced
  • 3-4 Tablespoons agave
  • 2 garlic cloves
  • 3 Tablespoons diced red onion
  • ¼ cup pimento
  • ½ cup fresh parsley leaves
  • ½ cup fresh basil leaves
  • ½ cup nutritional yeast
  • 1 teaspoon dried oregano
  • ½ teaspoon chili pepper flakes
  • Salt and pepper, to taste
Instructions
  1. Place all Salad ingredients in a large bowl.
  2. Place Dressing ingredients in a food processor or blender and combine until creamy.
  3. Pour dressing over salad, and toss well.
