Ingredients
Salad:
- 4-5 cups Romaine lettuce, chopped
- ¼ cups black and green olives
- ½ cup red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, peeled and cubed
- 2 carrots, ribbon peels
- ¼ cup red onion, sliced
- ¼ cup pepperoncini, sliced
Dressing:
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 lemon, juiced
- 3-4 Tablespoons agave
- 2 garlic cloves
- 3 Tablespoons diced red onion
- ¼ cup pimento
- ½ cup fresh parsley leaves
- ½ cup fresh basil leaves
- ½ cup nutritional yeast
- 1 teaspoon dried oregano
- ½ teaspoon chili pepper flakes
- Salt and pepper, to taste
Instructions
- Place all Salad ingredients in a large bowl.
- Place Dressing ingredients in a food processor or blender and combine until creamy.
- Pour dressing over salad, and toss well.
