Raw Falafel

Raw falafel is just as delicious – and so much more nutritious – than the original deep-fried version. Serve with Raw Tzatziki sauce for a great Greek treat.
Yield
20-25 falafels
Ingredients
- 1 cup walnuts
- 1½ cups almond meal
- 3 Tablespoons tahini
- Juice of 1 lemon
- ½ teaspoon red chili pepper flakes
- 1 teaspoon garlic flakes
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon coriander
- ½ teaspoon cardamom
- ½ cup chopped fresh cilantro
- 1 cup chopped fresh parsley
- 2 Tablespoons olive oil
- Salt and pepper to taste
Instructions
- Place all ingredients in a food processor and process until smooth.
- Roll into golf size balls and place on dehydrator tray.
- Dehydrate at 105° for 24 hours. Serve on a bed of lettuce or cabbage with you favorite sauce.
