Tofu Taco Filling
This is a flavorful and spicy way to cook up tofu. You can use this filling for tacos, burritos, and for nachos!

Ingredients
- ¼ cup olive oil
- 1 cup chopped onion
- 1 (14-ounce) block extra firm tofu
- 2 Tablespoons ancho chili powder
- ½ teaspoon cumin
- ¼ teaspoon cayenne
- 1 (4-ounce) can diced green chilies
- 1 cup chopped Roma tomatoes
- ½ cup corn
- ½ cup black beans
- ¼ cup lime juice
- Salt and pepper to taste
- ¼ cup chopped cilantro
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion and sauté until onions become translucent.
- Crumble in tofu and cook until slightly browned.
- Add ancho chili powder, cumin and cayenne. Mix well.
- Add green chilis, tomatoes, corn, black beans and lime juice. Season with salt and pepper. Cook for 5 minutes.
- Remove from heat and fold in cilantro.
- Use as a filler for your tacos, burritos, or on top of nachos. Enjoy!
