Asparagus Salad w/ Balsamic Vinaigrette

Asparagus Salad with Balsamic Vinaigrette Recipe from Down to Earth Organic and Natural

Ingredients
Salad
- 1 bunch asparagus
- 1½ cups water
- 1 lemon, juiced
- Pinch of salt
- Olive oil
- 1 head Romaine lettuce, shredded
- ¼ cup thinly sliced red onion
- 1 cup cherry tomatoes, halved
- 1 cup crumbled feta cheese (optional)
Dressing
- ¼ cup balsamic vinegar
- 3 Tablespoons olive oil
- 1 lemon, juiced
- 1 Tablespoon agave nectar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Wash and pat dry asparagus. Cut off woody ends.
- Place water in sauté pan. Add lemon juice, salt and a drizzle of olive oil.
- Bring to a boil. Add asparagus, cover and reduce heat.
- Steam for 5 minutes until al dente. Drain and let cool.
- Cut asparagus into bite size pieces.
- In a large bowl combine asparagus, lettuce, onion, tomatoes and feta cheese.
- In a separate bowl whisk Dressing ingredients together.
- Pour Dressing over salad and toss gently. Enjoy!
