Mango Mac-Nut Bread
If you love banana bread, wait til you try mango bread! This recipe is perfect for a summer brunch or anytime you can get your hands on some great local mango!

Ingredients
- 1 1/2 cups ripe mango chunks
- 1/2 cup macadamia nuts, chopped
- 2/3 cup maple syrup
- 1/4 cup plant milk
- 1/2 cup applesauce
- 1 teaspoon lemon juice
- 1 tsp vanilla extract
- 1/3 cup coconut oil
- 2 cups flour of choice (For a gluten-free option like the one shown in our video link, we recommend using a Gluten-Free 1:1 Flour like Bob's Red Mill - see Shopping List below)
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350º F
- Combine flour, baking soda, baking powder and salt in a mixing bowl
- Mash mango chunks and lemon juice with a fork until smooth, then add maple syrup, plant based milk, applesauce, vanilla extract and coconut oil
- Combine wet ingredients with the dry. Fold in chopped macadamia nuts until evenly combined
- Pour batter into a lined bread pan. Optional: Top with more macadamia nuts
- Bake at 350º for 50 minutes or until a toothpick inserted in the middle comes out clean
