Chocolate Haupia Pie Squares

Ingredients
Crust
- 1 cup finely processed graham cracker
- ¼ cup brown sugar or coconut palm sugar
- ½ cup macadamia nuts, chopped
- 1 stick butter, softened at room temperature
- Pinch of sea salt
Haupia Filling
- 1 cup sugar
- 1 (13.5-ounce) can or 2 cups coconut milk
- 1 cup water
- ½ cup cornstarch
- 1 cup chopped chocolate bar or chocolate chips, melted over double boiler
- ½ teaspoon vanilla extract
- ¼ - ½ cup shredded coconut (optional)
Instructions
- Preheat oven to 350°. Lightly grease an 8x8 inch baking pan with butter.
- To make Crust, combine all Crust ingredients in a medium mixing bowl. Press dough into bottom of greased pan. Bake for 8-10 minutes. Remove from oven and let cool completely. Cooling is important because it allows the crust to set.
- To make Haupia Filling, add sugar and coconut milk in a saucepan over medium high heat. Whisk continuously to dissolve sugar. Bring almost to a boil, then lower heat to low.
- Combine water and cornstarch in a small bowl. Add cornstarch mixture to sugar and coconut milk mixture. Cook on medium heat and whisk continuously until mixture thickens into a thick pudding like consistency.
- Divide Haupia Filling into two bowls. Combine melted chocolate and vanilla extract with Haupia Filling in one of the bowls. This will be your chocolate haupia layer.
- Pour chocolate haupia filling over cooled crust. Then, pour plain haupia over chocolate layer. Cover and let set in the refrigerator for at least 2 hours.
- Remove from refrigerator and top with shredded coconut, if desired. Slice into small squares. Serve and enjoy!
