Sugar-Free Triple Chocolate Chip Cookie

How much chocolate you can get into one cookie? Even more incredible is that this sweet treat is sugar-free!

Ingredients

Cookie Dough

  • 1 cup hazelnuts
  • 1 Tablespoon dried coconut flakes
  • 1½ teaspoons raw cacao powder
  • ½ teaspoon cinnamon (optional)
  • ½ teaspoon vanilla extract (optional)
  • Pinch of stevia + more if desired
  • Pinch of salt + more if desired
  • 2 Tablespoons extra virgin coconut oil or non-dairy milk
  • 1 Tablespoon cacao nibs

Chocolate Sauce

  • 1½ teaspoons raw cacao powder
  • 1 Tablespoon extra virgin coconut oil or non-dairy milk
  • Pinch of stevia + more if desired
  • Pinch of salt + more if desired
Instructions
  1. To prepare Cookie Dough: Combine hazelnuts, coconut, cacao powder, vanilla extract, stevia, salt, and coconut oil into a blender. Pulse to break up the nuts and then blend into mixture is well combined.
  2. Taste mixture and add more cinnamon, sweeter, and/or salt to taste.
  3. Add in cacao nibs. Either pulse gently into mixture or stir them into the mixture in order to keep them whole chocolate chips.
  4. Line a large plate with plastic wrap - the plastic will stop the chocolate from sticking. Shape mixture into cookies and place onto plate. Freeze for 5-10 minutes.
  5. To prepare Chocolate Sauce: In a small bowl, stir together all Chocolate Sauce ingredients until well combined. Check the sweetness and adjust to taste.
  6. Bring cookies out of the freezer. Pour Chocolate Sauce evenly over cookies. Return to freezer for a few more minutes to allow chocolate to set. Serve and enjoy!
