Vegan Chocolate Chip Cookies

Ingredients
- 2 cups all-purpose flour
- 1 Teaspoon baking powder
- ¾ Teaspoon baking soda
- ½ Teaspoon fine salt
- 1 ¼ cups vegan chocolate chips
- ½ cup sugar
- ½ cup packed light or dark brown sugar
- ½ cup plus 1 Tbsp canola oil
- ¼ cup plus 1 Tbsp water
- 1 Teaspoon vanilla extract
Instructions
- In a large bowl whisk together the flour, baking powder, baking soda, and salt. Add the vegan chocolate chips to the flour and toss to coat.
- In another bowl whisk the sugars with the canola oil, water, and vanilla extract until smooth and incorporated.
- Add the flour mixture to the sugar mixture. Stir until just combined with no flour visible. Do not overmix!
- Cover with plastic wrap. Refrigerate the dough for at least 12 hours and up to 24 hours.
- Preheat oven to 350 degrees. Line two cookie sheets with parchment paper. Remove dough from refrigerator and use spoon to portion dough into 2-inch mounds.
- Bake for 12-13 minutes, or until the edges are just golden. Enjoy!
