Black Bean and Corn Dip

Ingredients
- 3 Tablespoons safflower oil
- ½ cup diced yellow onion
- 1 (8-ounce) container of vegan cream cheese
- 1 cup chunky salsa- mild or hot
- 3 cups tomatoes, diced
- 1 can black beans, rinsed
- 1 ½ cups corn (fresh, canned or frozen-defrosted)
- 2 teaspoons garlic, minced
- 3 Tablespoons diced red onion
- ½ cup chopped cilantro
- 2 limes, juiced
- Salt and pepper to taste
Instructions
- Heat oil in skillet. Add onions and sauté until translucent.
- Stir in cream cheese and salsa until melted and well combined. Remove from heat.
- In a large bowl combine, tomatoes, black beans, corn, garlic, red onion, cilantro, limes, salt and pepper.
- Stir in cooled sauté mixture. Serve with corn chips and enjoy!
