Cashew Miso Mayo

Replace traditional mayonnaise with this rich and flavorful spread. Try it on sandwiches, veggie burgers or on our Okinawan Sweet Potato Salad.

Ingredients
  • ½ cup cashews
  • 2 Tablespoons miso, any kind
  • 2 Tablespoons olive oil
  • 1 Tablespoon Dijon mustard
  • 1 teaspoon honey
  • ¼ teaspoon black pepper
  • Water, for texture
Instructions
  1. Soak cashews in water for at least an hour. Drain well.
  2. Combine all ingredients, except the water, in a food processor. Blend until smooth adding 1 Tablespoon of water at a time. Add just enough water for consistency to be thick and fluffy. Season with salt and pepper if desired. Use immediately. We recommend trying it with our Okinawan Sweet Potato Salad. Enjoy!
