Ingredients
Bean Mixture
- 2 (15 ounce) cans of white beans, rinsed and drained
- 1 (15 ounce) can black eye peas, rinsed and drained
- 2 (15 ounce) cans corn, drained
- 1 cup diced red bell pepper
- 1 jalapeño, deseeded and diced
- ½ cup diced red onion
- 3 roma tomatoes, deseeded and diced
- 1 cup chopped cilantro
Dressing
- ½ cup red wine vinegar
- 2 teaspoons coconut nectar
- ½ teaspoon garlic powder
- ¼ cup olive oil
- Salt and pepper to taste
- Juice of 1 lime
Instructions
- Combine all Bean Mixture ingredients into a large bowl.
- In a separate bowl combine all the Dressing ingredients. Whisk together until well blended.
- Pour Dressing mixture over Bean Mixture. It’s best chilled at least 2 hours or more. Serve and enjoy with tortilla chips or crackers as a delicious dip.
