BBQ Tofu Ribs & Avocado

This tasty recipe combines heart-healthy tofu and avocado to make a full-flavored dish! Both main ingredients help to lower LDLs (bad cholesterol).

Ingredients
- 1 (14-ounce) block extra firm tofu, drained and patted dry
- 1/4 cup low-sodium tamari or soy sauce
- 1 1/2 teaspoons vegan Worcestershire sauce
- 2 Tablespoons extra virgin olive oil, divided
- 1 Tablespoon toasted sesame oil
- 2 Tablespoons honey or agave nectar
- 3 cloves garlic, minced
- 1 Tablespoon nutritional yeast
- 1 teaspoon smoked paprika
- 1 firm-ripe avocado, peeled and pitted
- 1 Tablespoon lemon juice
- Salt and pepper to taste
- 1/4 cup barbecue sauce of choice
- 1 1/2 teaspoons each sesame seeds and flax seeds
- 1/2 cup chopped cabbage
Instructions
- Preheat oven to 400º. Cut tofu into 6 slices.
- In a mixing bowl, whisk together soy sauce, vegan Worcestershire sauce, 1 Tablespoon olive oil, toasted sesame oil, honey, minced garlic, nutritional yeast and smoked paprika. Place tofu slices in bowl. Rub mixture into tofu - making sure to coat both sides.
- Bake for 15-20 minutes or until all liquid has evaporated and tofu becomes nice and firm. Halfway through, flip tofu over and baste with soy sauce mixture.
- Once baked, remove from oven. Set aside roasted avocado. Brush tofu on both side with barbecue sauce. Return to oven or transfer to an open grill. Cook for an additional 5-7 minutes or until sauce caramelizes slightly. Layer tofu ribs and roasted avocado on top of cabbage. Garnish with seeds and enjoy!
