Grain Bowl: Spelt, Cabbage, Mushrooms, and Nori

Ingredients
- 1 cup cooked spelt grains (warm or room temperature)
- 1/3 cup braised purple cabbage
- 3 whole, roasted shiitake mushrooms
- 2 Tablespoons nori compote
- 3 Tablespoons crumbled feta cheese
- pickled watermelon radish
- toasted pumpkin seeds
- olive oil for drizzling
- freshly ground black pepper
Instructions
- Place spelt grains in the bottom of a bowl. Keeping the components seperate, add the braised cabbage, nori compote, and roasted shiitake mushrooms.
- Garnish with crumbled feta, pickled watermelon radish, and pumpkin seeds. Finish with a drizzle of olive oil and black pepper.
