Mizuna Pesto

An infusion of traditional Japanese ingredients creates a delicious pesto with international flair.

Ingredients
- 1 package soba noodles
Pesto
- 1/2 -1 cup packed basil leaves
- 3-5 Tablespoons extra virgin olive oil
- 1/3 cup nutritional yeast
- 3 cloves garlic
- ½ bunch mizuna
- Pinch of salt
- 1 cup macadamia nuts, or nut of choice
- Juice of 1 lemon
- Gomasio, to garnish
Instructions
- Prepare soba noodles according to package instructions. Set aside
- Place all Pesto ingredients in a food processor. Blend until well combined.
- Toss Pesto with cooked soba. Garnish with gomasio and enjoy!
