Ingredients
- Raw-mesan Cheese
- ¼ cup raw cashews
- ¼ cup nutritional yeast
- 1 head cauliflower, finely diced
- 2 large tomatoes, diced
- ¼ cup diced red onion
- Juice of 1 lemon
- 1 teaspoon cumin
- ½ cup chopped sundried tomato
- 1 cup chopped shiitake mushroom
- ½ cup pine nuts
- ¼ chopped fresh basil
- 1 avocado, diced
- Salt and pepper, to taste
Instructions
- Place Raw-mesan Cheese ingredients into a food processor. Blend until crumbly and well combined.
- Place cauliflower in food processor until finely diced into a rice consistency.
- Place cauliflower into a large bowl. Mix in Raw-mesan Cheese and remaining ingredients. Serve and enjoy!
