Sesame Noodles w/ Adzuki Beans
This dish is delicious warm or cold. To make it an easy lunch: prepare noodles, vegetables and sauce ahead of time. Combine all-together when ready to eat. To keep noodles from sticking, pour a little sesame oil over and toss before storing.

Ingredients
- 1 (9.5-ounce) package udon or soba noodles
Sesame Sauce
- 1/4 cup tamari
- 2 Tablespoons turbinado sugar
- 4 garlic cloves, minced
- 2 Tablespoons rice vinegar
- 3 Tablespoons sesame oil or toasted sesame oil
- 1 (15-ounce) can adzuki beans or 2 cups cooked adzuki beans, drained & rinsed
- 1 cup finely chopped broccoli
- 1 cup chopped carrots
- 1/2 cup sliced red onion
- 1/2 cup corn
- 1 cucumber, diced
- 1/2 cup shredded cabbage
- 1/4 cup chopped green onions
- 2-3 Tablespoons sesame seeds or gomasio
Instructions
- Bring a pot of water to boil and cook noodles according to package directions.
- Drain noodles in a colander. Transfer to a large serving bowl.
- In small bowl, whisk all Sesame Sauce ingredients together until sugar has dissolved.
- Add broccoli, carrots, red onion, tomatoes, corn, cucumber, and cabbage to noodles. Pour Sesame Sauce all over. Toss well.
- Garnish with green onions and sesame seeds. Enjoy!
