Sesame Noodles w/ Adzuki Beans

This dish is delicious warm or cold. To make it an easy lunch: prepare noodles, vegetables and sauce ahead of time. Combine all-together when ready to eat. To keep noodles from sticking, pour a little sesame oil over and toss before storing.

Ingredients
  • 1 (9.5-ounce) package udon or soba noodles

Sesame Sauce

  • 1/4 cup tamari
  • 2 Tablespoons turbinado sugar
  • 4 garlic cloves, minced
  • 2 Tablespoons rice vinegar
  • 3 Tablespoons sesame oil or toasted sesame oil
  • 1 (15-ounce) can adzuki beans or 2 cups cooked adzuki beans, drained & rinsed
  • 1 cup finely chopped broccoli
  • 1 cup chopped carrots
  • 1/2 cup sliced red onion
  • 1/2 cup corn
  • 1 cucumber, diced
  • 1/2 cup shredded cabbage
  • 1/4 cup chopped green onions
  • 2-3 Tablespoons sesame seeds or gomasio
Instructions
  1. Bring a pot of water to boil and cook noodles according to package directions.
  2. Drain noodles in a colander. Transfer to a large serving bowl.
  3. In small bowl, whisk all Sesame Sauce ingredients together until sugar has dissolved.
  4. Add broccoli, carrots, red onion, tomatoes, corn, cucumber, and cabbage to noodles. Pour Sesame Sauce all over. Toss well.
  5. Garnish with green onions and sesame seeds. Enjoy!
