Soba Noodles w/ Peanut Sauce

Ingredients
- 1 (9.5-ounce) package soba noodles
- 3 Tablespoons safflower oil
- ¼ cup diced green onion
- ⅓ cup diced red onion
- 3 cloves garlic, minced
- ½ teaspoon coriander
- ½ teaspoon cumin
- ½ teaspoon turmeric
- ½ teaspoon ginger powder
- 2 Tablespoons tamarind
- 1 Tablespoon agave nectar
- ¼ cup creamy peanut butter
- 2 Tablespoons tamari
- 1 Tablespoon hot sauce
- Juice of 2 limes
- Salt and pepper to taste
- 1-3 Tablespoons
Instructions
- Prepare soba noodles according to package and set aside in large bowl.
- Heat safflower oil in a large skillet over medium heat.
- Add onions, garlic and spices and let brown 2-3 minutes to bring out flavors.
- Stir in tamarind, agave, peanut butter, tamari, hot sauce, lime juice, salt and pepper and 1 Tablespoon water. Simmer for 10 minutes until sauce thickens. Add more water to thin sauce to desired consistency.
- Pour sauce over noodles. Toss well to thoroughly coat noodles. Serve immediately and enjoy!
