Soba w/ Mushroom Sauce

Ingredients
- 1 (8-ounce) package soba noodles
- 1 Tablespoon safflower oil
- 2 cups sliced mushrooms
- 1-2 Tablespoons water
- 2 cups unsweetened plain almond milk, divided
- 2 Tablespoons nutritional yeast
- 2 Tablespoons non-dairy plain creamer
- 2 teaspoons cornstarch
- 2 teaspoons water
- 2-3 Tablespoons fresh chopped herbs like parsley, dill, rosemary, or basil
Instructions
- Cook soba noodles according to package directions.
- Heat oil in a large skillet over medium heat. Add mushrooms and water. Sauté for about 8-10 minutes or until very soft.
- Stir in 1 cup almond milk. Bring to a simmer and let cook for a couple of minutes.
- Stir in nutritional yeast, non-dairy creamer, and remaining cup of almond milk. Let cook for a few minutes.
- In a small bowl, whisk together cornstarch and water to make a slurry paste.
- Add slurry to sauce and mix well to combine. Simmer for 3-5 minutes or until thickened.
- Divide noodles among serving plates. Ladle mushroom sauce on top. Top with fresh herbs and enjoy!
