Vegan Garlic and Spirulina Fish

Ingredients
- 3 Tablespoons olive oil
- 1/3 cup sliced garlic
- ½ stick vegan butter
- 1/3 cup minced garlic
- ½ teaspoon sea salt, more if needed
- 1 cup chopped kale
- 1 cup chopped red bell pepper
- 1 large shallot, chopped
- 2 Tablespoons mirin
- Zest of 1 lemon
- ½ lemon, juiced
- 1 (10.5 ounce) box frozen fish, baked and de-breaded, and cut into strips
- ½ teaspoon spirulina
- 1-2 pinches red pepper chili flakes
- Black pepper, to taste
- 2-3 Tablespoons cilantro
Instructions
- Heat olive oil over medium heat in a large skillet.
- Add sliced garlic and cook until crispy golden brown and remove from skillet. Let cool.
- Heat vegan butter in skillet. Add minced garlic and salt. Add kale, bell peppers, and shallots. Cook until vegetables are soft.
- Add mirin, lemon zest, and lemon juice. Cook and stir for about 1 minute.
- Add vegan fish, and stir in spirulina, red pepper chili flakes and black pepper. Cook for another 5 minutes. Garnish with fried sliced garlic and cilantro. Serve and enjoy over pasta or rice!
