Wasabi Pea Encrusted Tofu w/ Sesame Miso Sauce

Ingredients
- 1 (14-ounce) package tofu
- 1 (4.4-ounce) package wasabi peas
- 1 cup all purpose flour
- Salt and pepper to taste
- 3 Tablespoons ground chia seeds
- ½ cup water + more if needed
- 3 Tablespoons safflower oil
Sesame Miso Sauce
- 3 Tablespoons miso
- 1 Tablespoon sesame oil
- 2 Tablespoons lemon juice
- ½ teaspoon ginger powder
- 1 teaspoon soy sauce
- 1 Tablespoon agave nectar
Instructions
- Preheat oven to 350°.
- Drain tofu and pat dry.
- Slice tofu in half length wise, then quarter to make 8 pieces.
- Grind up wasabi peas in a food processor until crumbly. Transfer peas to a plate.
- Place flour on a plate and season with salt and pepper.
- Place chia seeds in a wide mouth bowl and add water. Mix well until a paste forms. You may need to add more water if paste becomes too thick. Line up, in the following order: flour, chia mixture, and pea crumbs to expedite coating.
- Coat tofu piece in flour, then wash in chia mixture, finally coat with pea crumbs. Place tofu on a baking sheet. Repeat until all tofu is coated
- Heat oil in a large skillet on medium heat and brown tofu on each side for 3-4 minutes.
- Return tofu to baking sheet and repeat until all tofu has been browned. Place in oven for 25- 30 minutes.
- While tofu is baking, combine all Sesame Miso Sauce ingredients in a food processor or blender until smooth. Remove tofu from oven and drizzle Sesame Miso Sauce over tofu. Enjoy!
