Zucchini Noodles with Raw Herb Cream Sauce

Enjoy this light and creamy version of traditional pasta. A spiralizer helps make perfect noodles, but you can also use a vegetable peeler or mandolin.

Ingredients
Raw Herb Cream Sauce
- 1 cup macadamia nuts
- ¼ cup fresh basil
- ¼ cup fresh parsley
- ¼ cup fresh dill
- ½ garlic clove
- Juice of 1 large lemon
- Salt and pepper to taste
- Water, as needed
Noodles
- 4 zucchini
- 2 carrots
- 1 cup diced fresh tomatoes
- 1 cup sliced black olives
- Fresh herbs for garnish
Instructions
- Place all Cream Sauce ingredients into a blender and blend until smooth and creamy. Add water for a thinner consistency. Set aside.
- Make zucchini and carrots into noodles using a spiralizer or other method. Add to a large bowl. Pour Cream Sauce over noodles and toss to coat. Add in tomatoes and olive and garnish with fresh herbs. Serve immediately for best results.
