Festive Salad with BBQ Ranch Dressing
Ingredients
Dressing:
- 1 cup vegan mayonnaise
- ¼ cup soy milk
- 1 garlic clove
- 1 teaspoon onion powder
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Dash cayenne pepper
- ⅛ cup BBQ sauce of choice
Salad:
- 2 cups kale, de-stemmed and roughly chopped
- 1 celery stalk
- 1 cucumber, chopped
- 2 grated carrots
- 2 Tablespoons⅛ cup diced red onion
- 1 head shredded Manoa lettuce
- ½ cup chopped fresh cilantro
- 1 cup cherry tomatoes
- 1 cup diced jicama
- ¾ cup cheddar cheese cubes
- Juice of 1 lime
Instructions
- Combine all Dressing ingredients in a food processor and process until smooth and creamy. Dressing can be stored in an air-tight container, refrigerated for up to a week.
- Place chopped kale in a large bowl. Massage kale by squeezing it in your hands until it begins to wilt. Drain off any excess juice.
- Combine kale and remaining ingredients, except lime juice, in a large serving bowl. Toss to combine.
- Pour lime juice over salad.
- Toss dressing into salad just before serving and enjoy!
