Raw "Potato" Salad
Raw Potato Salad recipe from Down to Earth Organic and Natural.

Ingredients
Salad
- 1 head cauliflower
- ½ cup sliced sweet peppers
- 2 cups sliced black olives *not raw
- ½ cup chopped green onions
- 1 cup chopped red cabbage
- 2 carrots, shredded
- 2 celery stalks, diced
- ¼ cup relish *not raw
Dressing
- 2 cups raw cashews, soaked 20 minutes or longer
- 2 lemons, juiced
- 1 Tablespoon mustard powder
- ¼ cup olive oil
- 2 teaspoons garlic powder
- 1 teaspoon cumin powder
- Salt and pepper to taste
- 1-3 Tablespoons water- as needed
Instructions
- Place all Salad ingredients in a large bowl. Set aside.
- Place Dressing ingredients in a food processor or blender and blend until creamy.
- Add more water until desired thickness is achieved.
- Pour Dressing over Salad and toss well. Enjoy!
