Seasonal Berry Crumble
Crumbles are a delicious way to use up an abundance of fruit, regardless of the season.

Ingredients
Filling
- 4 cups mixed berries
- 1/3-½ cup granulated sugar
- 2 teaspoons lemon zest
- 2 Tablespoons lemon juice
- 2 Tablespoons cornstarch
Crumble
- ¼ cup whole wheat pastry flour
- ¼ cup unbleached flour
- ½ cup rolled oats
- ¼ cup shredded coconut
- ¼ cup packed brown sugar
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup cold vegan margarine
Instructions
- Preheat oven to 375°.
- Combine all Filling ingredients in a medium sized bowl. Mix well and set aside.
- To prepare Crumble: In a separate bowl combine, flours, oats, coconut, brown sugar, cinnamon and salt. Grate in cold vegan margarine. Mix until it resembles a coarse meal.
- Pour Filling mixture into an 8x8 baking dish. Top evenly with Crumble.
- Bake for 30-35 minutes until top is browned and fruit is bubbling. Serve while still warm. You can top it off with whip cream or ice cream. Enjoy!
