Spirulina Energy Balls
Ingredients
- 1 cup pitted dates
- ¾ cup Brazil nuts, plus 2 Tablespoons coarsely chopped for rolling, if desired
- ½ cup desiccated coconut, plus 2 Tablespoons extra for rolling, if desired
- 3 Tablespoons raw cacao nibs
- 1 Tablespoon spirulina powder
- 2 Tablespoons raw cacao powder for rolling, if desired
- 1 Tablespoon coconut oil (optional)
Instructions
- Place all ingredients except coconut oil in a food processor. Pulse to combine. You may add coconut oil if the mixture is too dry.
- Scoop out some mixture and roll it between your palms to shape into balls. If you wish, roll energy balls in chopped Brazil nuts, desiccated coconut, or cacao.
- Place in the refrigerator for at least 15 minutes to firm up. Serve and enjoy!
