Vegan Banana Bread
Coconut oil makes this recipe so mouthwatering and moist no one will guess that it’s vegan!

Ingredients
- ½ cup whole raw macadamia nuts
- 1 cup organic whole wheat pastry flour
- ¾ cup organic unbleached white flour
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- ½ cup unrefined coconut oil
- ½ cup dark brown sugar (unprocessed is best)
- ½ cup organic granulated sugar
- 1 cup very ripe bananas, mashed
- ⅓ cup silken tofu, drained and mashed
- ¼ cup soy milk
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla extract
- ½ cup vegan chocolate chips (optional)
Instructions
- Preheat oven to 350°. Line a baking sheet with parchment paper. Spread macadamias on baking sheet and roast for 5-7 minutes. Remove from oven and let cool.
- Sift together flours, baking soda, cinnamon, nutmeg and salt in a large bowl.
- Meanwhile, combine coconut oil and sugars in a blender and blitz for 1 minute. Add banana, tofu, soy milk, vinegar and vanilla and process until smooth.
- Fold wet ingredients into flour mixture and stir until just incorporated.
- Chop roasted nuts coarsely. Fold nuts and chocolate chips (optional) into batter. Grease a loaf pan with coconut oil and pour in batter. Sprinkle top of batter with sugar if desired (it will caramelize and create a delicate crust).
- Bake 1-1½ hours or until a toothpick inserted into the center of the loaf comes out clean. Remove from oven and let cool. Serve as breakfast, dessert or as a snack. Enjoy!
