Ingredients
- 10 cups bite-sized mixed vegetables, such as broccoli, cauliflower, carrot, zucchini and sweet potato
- ¼ cup olive oil
- 1 cup diced onion
- 4 cloves garlic, minced
- ⅔ cup unbleached all-purpose flour
- 1½ teaspoons dried basil
- 1½ teaspoons dried thyme
- 1½ teaspoons dried oregano
- ½ teaspoon nutmeg
- 5 cups warm milk
- ¾ cups grated cheese + 1 cup for garnish
Instructions
- Preheat oven to 350°. Grease a 9" x13" baking dish.
- Steam vegetables and set aside.
- Heat oil in a large pot.
- Add onion and garlic and sauté for 4-5 minutes.
- Remove from heat; add flour, nutmeg and herbs. Mix to form a paste.
- Slowly whisk in warm milk.
- Return to heat. Stir constantly until thick.
- Add ¾ cup grated cheese, salt and pepper. Remove from heat.
- Add steamed veggies and gently toss to coat.
- Pour mixture into prepared baking dish. Sprinkle with remaining cheese and bake for 20-25 minutes or until cheese is golden brown. Enjoy!
