Ingredients
Salad
- 1½ cups wheat berries, soaked for 1 hour
- 1 cup chopped red pepper
- ¼ cup finely diced red onion
- ¼ cup cherry tomatoes, halved
- ¼ cup diced fresh parsley
- ¼ cup diced fresh cilantro
- 1 cup diced cucumber
- 2 cups chopped kale
- 1 (15-ounce) can garbanzo beans
- ¼ cup pine nuts
Dressing
- 3 Tablespoons red onion
- 2 garlic cloves
- ¼ cup balsamic vinegar
- ¼ cup olive oil
- 2 Tablespoons agave nectar
- 2 Tablespoons liquid aminos
- ¼ teaspoon each dried basil, red pepper flakes and dried parsley
- Pinch of cayenne
Instructions
- Place soaked wheat berries in a medium pot and cover with 3" of water.
- Bring to a boil, reduce heat and simmer for 1 hour. Drain and cool.
- Combine wheat berries with all remaining Salad ingredients in a large a bowl.
- Combine all Dressing ingredients in a food processor or blender until creamy.
- Pour dressing over salad and toss well. Enjoy!
