Wheat Berry & Kale Salad Recipe from Down to Earth Organic and Natural

Ingredients

Salad

  • 1½ cups wheat berries, soaked for 1 hour
  • 1 cup chopped red pepper
  • ¼ cup finely diced red onion
  • ¼ cup cherry tomatoes, halved
  • ¼ cup diced fresh parsley
  • ¼ cup diced fresh cilantro
  • 1 cup diced cucumber
  • 2 cups chopped kale
  • 1 (15-ounce) can garbanzo beans
  • ¼ cup pine nuts

Dressing

  • 3 Tablespoons red onion
  • 2 garlic cloves
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 2 Tablespoons agave nectar
  • 2 Tablespoons liquid aminos
  • ¼ teaspoon each dried basil, red pepper flakes and dried parsley
  • Pinch of cayenne
Instructions
  1. Place soaked wheat berries in a medium pot and cover with 3" of water.
  2. Bring to a boil, reduce heat and simmer for 1 hour. Drain and cool.
  3. Combine wheat berries with all remaining Salad ingredients in a large a bowl.
  4. Combine all Dressing ingredients in a food processor or blender until creamy.
  5. Pour dressing over salad and toss well. Enjoy!
